- 1 peach
- 2 ounces crumbled blue cheese
- 1/4 cup balsamic vinegar
- 2 pieces flatbread
- 1/2 cup fresh arugula
Preheat oven to 375.
In a small saucepan, heat the vinegar over medium heat until it reduces by half. Set aside. Meanwhile, thinly slice the peach.
On top of each flatbread, lay out the peach slices and top with the crumbled blue cheese. Bake for 10-15 minutes until flatbread begins to brown and crisp. Remove from oven and top with arugula and a drizzle of the reduced balsamic.
