- 2 artichokes
- 1 1/2 cups panko breadcrumbs
- 1/2 cup Parmesan cheese
- 2 tablespoons extra virgin olive oil
- 2 tablespoons fresh chives, chopped
- Salt and pepper
Preheat oven to 400.
Prepare the artichokes. Peel off the bottom few layers of leaves, cut the tops off the artichokes, cut in half, scoop out the choke (check out our video to see you through the first few steps). Season the inside with salt and pepper.
Mix together the breadcrumbs, cheese, olive oil, and chives. Stuff the cavity of the artichokes. Place in a baking dish, add enough water to come about 1/2 way up the sides of the artichokes. Cover with foil. Bake for about 45 minutes.
Remove the foil and bake for about an additional 10 minutes until the top gets golden brown.
